CharacteristicsGlycerin known as glycerin, pure glycerol is a colorless, odorless, viscous liquid with a sweet taste. Boiling point of 290 ℃, melting point 17.9 ℃, relative density of 1.2613. Infinitely miscible with water, dried over anhydrous glycerin has a strong water absorption.
Application1 In foods and beverages, glycerol serves as a humectant, solvent and sweetener, and may help preserve foods. It is also used as filler in commercially prepared low-fat foods, and as athickening agent in liqueurs
2 Glycerol is also used to manufacture mono- and di-glyceridesfor use as emulsifiers, as well as polyglycerolestersgoing into shortenings and margarine.
